Mixed Bean Chilli

Oh.My.Days – I am LOVING this recipe. You can substitute the can of mixed beans for turkey mince, if you want a none vegan option (I made this version for my flatmate and it works out the same, in terms of the containers used for the meal plan).

Ingredients (serves 8):

2tsp. coconut oil
1 medium onion
1 green bell pepper
1 red bell pepper
2 cloves of garlic
2 cans kidney beans
1 can mixed beans
2 cans chopped tomatoes
1 tbsp. chilli powder
1/2 tsp. sea salt
2 tsp. red pepper flakes
Fresh parsley to garnish

Method:

  1. Heat the oil in a large pan over a medium heat.
  2. Add the chopped onion and bell peppers and cook until the onion is translucent (stirring occasionally).
  3. Add the garlic, then continue to cook for 1 minute.
  4. Add the beans, tomatoes and spices, bring to the boil, then reduce to a simmer. Leave for around 20 minutes (until thickened).

If you’re following any of the meal plans this recipe = 1/2 green, 1 yellow, 1 red, 1/2 tsp

*Serve with rice and add 1 yellow container or cauliflower rice and add 1 green.
