Watermelon Ice Lollies

So I’m going a bit watermelon crazy at the moment (I have quite a few recipes coming up, as I went overboard and bought too much of the stuff, and I don’t like to waste food, so I’m making new recipes everyday with it).

These are LIFE. They are perfect for the summer holidays (if we can even call it summer here), and make such a fantastic and healthy alternative to store bought ice lollies. They’re one in a melon 😂

stacey hogan - healthy watermelon ice lollies

Ingredients (Serves 4).

360g fresh watermelon
50g good quality dark chocolate
10g peanut butter
5g powdered berries (I’ve used Arctic Berries cranberry powder)

Method:

  1. Chop the melon into 4  rectangular blocks, then place a lolly stick in the bottom of each.
  2. Melt the chocolate over a pan of boiling water, then coat half of the lollies in it.
  3. Add a dash of peanut butter to each, then sprinkle your powdered berries on top.
  4. Freeze for at least 3 hours, then eat 🙂
