Because, who said salads can only be fruit or veg? Why not try a fruit AND veg salad. This is soooooo refreshing and super easy to throw together when you don’t have much time. It’s the perfect, fresh, summer salad that can be eaten alone or as a side dish.
The fresh mint adds such a lovely refreshing taste to the salad too, and it has so many health benefits including; promotes digestion, soothes the stomach in case of indigestion and it’s a fantastic pallette cleanser too, whats not to love?

Ingredients (serves 1):
6 cherry tomatoes
2 spring onions
1/2 tbsp fresh basil
1/2 tbsp fresh mint
1-2 tbsp apple cider vinegar
1 tsp maple syrup
- Slice the watermelon, cucumber, mango, cherry tomatoes and spring onion and add to a bowl. Mix well.
- Tear up the fresh mint and basil and sprinkle on top of the fresh fruit and veg.
- Mix together the apple cider vinegar and maple syrup then pour over the salad.
