I LOVE these flourless muffins, they are super easy to make and make a fantastic grab and go breakfast or snack.
I first made these for some friends and they were enjoyed by all (including my friends little baby and 7 year old niece).
I love bananas too, they really are a miracle fruit. You’ll never look at the humble banana the same way again after discovering the many health benefits and reasons to add them to your diet.
They can help to combat depression, make you smarter, cure hangovers, relieve morning sickness, protect against kidney cancer, diabetes, osteoporosis, and blindness. Plus they can even cure the itch of a mosquito bite and put a great shine on your shoes. They’re not just for monkeys 🍌🙈

Flourless Banana Muffins – makes 12
200g almond butter
1 tsp. baking powder
1 tbsp. honey or maple syrup
1 tsp. vanilla extract
Raspberry & desiccated coconut
Blueberry and oats
Walnut & raisin
Dried Cranberries & flaked almonds
1. Preheat the oven to 180C
2. Mash the banana, then mix together with the almond butter, baking powder, eggs, honey & vanilla.
3. Grease your muffin tins, then fill with the mixture. Drop in whatever choice of optional extras you’ve chosen.
4. Bake for 20-25 minutes. Enjoy
