WOW! If you haven’t tried sweet potato toast yet, you’re soooooo missing out!! It’s AMAZING. You can toast it under the grill or in the toaster (I had to put mine in the toaster twice for it to be cooked).
Sweet potatoes pack such a powerful nutritional punch too. They have over 400% of your daily needs for vitamin A in one medium sweet potato (with skin) as well as lots of other nutrients like fibre and potassium.
The possibilities with it are endless too – I’ve had so many topping on mine before, here’s a few suggestions:
Avocado, lime & chilli flakes
Almond butter & my homemade strawberry chia jam
Greek yoghurt & blueberries
Almond butter & banana
Cottage cheese & pomegranate
Ingredients (serves 1):
2 slices of sweet potato
Juice from 1/2 lime
1/2 tsp. chilli flakes
1 tbsp almond butter
1 tsp strawberry chia jam
- Place the sweet potato slices in the toaster on high (I toasted mine twice to make them nice and soft)
- Mash the avocado and lime, then spread over one of the slices and sprinkle chilli flakes on top.
- Spread the almond butter over the other slice, then spread the jam on top.
