Lemon Bliss Balls

I absolutely LOVE bliss balls/energy balls/date balls – or whatever you want to call them. I make some variation of them every week (my favourite flavour has been salted caramel for the past few weeks, but now we have some pretty steep competition…….) Enter my lemon bliss balls.

I had a request from one of my followers on Instagram to make a healthy energy ball without using a blender or food processor, so I decided to take on the challenge. These seriously could not be easier to make (they take less than 5 minutes) and there’s no fancy equipment required or expensive ingredients.

If you have a sweet tooth (like me), but want to cut out or cut back on your sugar intake these would be perfect for you. They’re gluten-free, free from refined sugar, vegetarian and vegan (if using maple syrup).

You can store these in the fridge for 1 week or any longer in the freezer.

Stacey Hogan Lemon Bliss Balls

Ingredients (makes 9): 

100g ground almonds
70g desiccated coconut
1 tsp. vanilla extract
3 tbsp honey or maple syrup
Zest from 1 lemon
Juice from half a lemon


  1. Add all the ingredients (except 20g of the desiccated coconut) to a large mixing bowl and mix until fully combined.
  2. Roll into balls and then roll in the remaining desiccated coconut.
  3. Place in the fridge to set for 30 minutes, then enjoy.
